This recipe is creative, it requires some attention to detail, and it will absolutely be worth it when you slice into it at the end. Porchetta is a fun way to up your pork butt game from the usual “pulled pork” cooks. It will excite your guests and will be a dish that really stands out at your next dinner party or date night!
Ingredients
- A whole boneless pork butt (around 10 pounds is best)
- ½ cup of extra virgin olive oil
- ⅓ cup minced garlic
- ⅓ cup chopped parsley
- ⅓ cup chopped sage
- 1 tbsp lemon zest
- 1 tbsp orange zest
- ⅓ cup kosher salt
- 3 tbsp cracked black pepper
- Butcher’s twine
Instructions
- Light your smoke tube if you opt to use one
- Set your smoker to 350 degrees and let it run while you prep your pork butt
- Slice the pork butt along the fat cap so it is able to roll out flat
- You’ll be re-rolling the pork butt in a pinwheel fashion once dressed
- Brush olive oil, garlic, parsley, sage, lemon, and orange onto the surface of the pork
- Sprinkle half your salt & pepper on to that
- Roll the pork back in to a pinwheel
- Secure the butt with the twine
- Use the rest of your salt & pepper onto the exterior of the butt
- Place butt directly onto center of grill when grill is at temp
- Let it smoke until 145 IT
- About four hours
- Remove from grill when it reaches temp
- Let sit for 30 minutes
- Remove twine
- Slice and serve!
